Autumn is nearly here, and if you have ever been dove hunting in Colorado then you know it can be hard to find something to do with the meat. That being said, doves can be absolutely delicious if prepared properly, so here are three great dove appetizer recipes that will make your mouth water and your next hunt all the more worth it.

Bacon Wrapped Jalapeno Dove Poppers

This dish is a simple twist on classic jalapeno poppers. The addition of tender, juicy dove breasts makes it hard to stop eating these delectable treats! We highly recommend these after your next Longmeadow dove hunt.

Ingredients:

  • 6 (or more) doves skinless, breasted out
  • jalapeño peppers halved and seeded
  • Fresh mozzarella 
  • Bacon (thin, not thick-cut)
  • Salt and pepper to taste

Instructions:

Cook and shred Dove breast. Cut the jalapeno peppers in half and remove the seeds. Tear up your mozzarella and mix it thoroughly with the shredded dove breast. Fill the jalapeno halves with the mixture. Take a strip of bacon and wrap it around the outside of the jalapenos. Bake in the oven at 400 degrees or cook on the grill until the bacon is crisp and enjoy!

Deep Fried Dove Nuggets

Here’s one for all the picky eaters out there! Who doesn’t love a good chicken nugget, right? But now take that concept to the next level with these deep fried dove nuggets. Your little ones will devour these in minutes if you’re not careful. Besides tasting amazing, they are also fairly easy to make. Trust us when we say that nobody will be able to stay away from these amazing treats!

Ingredients:

  • Dove breasts (as many as you’ve got!)
  • Flour
  • Eggs
  • Oil (of your choosing)
  • Breadcrumbs
  • Your favorite seasonings
  • Salt and pepper to taste

Instructions:

Mix the flour and breadcrumbs in a shallow bowl. Add some of your favorite spices and seasonings. We recommend salt, pepper, white pepper, paprika, thyme, oregano, basil, celery salt, and garlic powder to name just a few. Place oil in a pot or deep pan and heat to a temp of 325 degrees. Beat the eggs together to create a wash and dunk your dove breasts in it. Then take them and roll them in the flour mixture to coat evenly. Place covered dove breasts one by one into the hot oil for 3 to 5 minutes a piece. Try to maintain a consistent temperature throughout the process and remember to not over crowd the pan with too many breasts at once. Remove from oil, let cool, and enjoy!

Flame Grilled Dove Kabobs

This one might take a little longer on the prep side of things but the reward is well worth the extra effort. A well put together kabob isn’t something to shake a stick at! Or is it? Either way adding dove breasts to one is a sure fire way to wow your hungry guests. Once you have them all ready to go, throwing them on the grill for your next backyard barbecue will have everyone asking for the recipe!

Ingredients:

  • Dove breasts (2-3 per kabob)
  • Bell peppers
  • Pineapple
  • Onion (red or white)
  • Other veggies (of your choosing)
  • Spices and seasonings
  • Salt and pepper to taste

Instructions:

Cut all of the ingredients into 1” in squares or cubes. Keeping the sizing consistent will ensure that everything cooks at the same rate. Next take your flavor cubes and put them in a bag with whatever spices and seasonings you desire. Add a bit of oil to the bag to create a marinade. Mix it all together and let sit in the fridge overnight. Once you are ready to cook these bad boys get your wooden skewers and load them up with your well marinated cubes of deliciousness. Finally, toss them on the grill for 10-12 minutes, rotating every 3-4. Pass them out, dig in, and enjoy!
